Herbed Roasted Vegetables
The dish is carefully seasoned with aromatic herbs such as thyme, which infuses the vegetables with a delightful fragrance. Recipe:
2 lbs. red potatoes, cubed (9 cups)
3 cups sweet onions, sliced
3 medium carrots, sliced
1/2 lb medium fresh mushrooms, halved
1 large sweet red pepper, cut into 1 1/2 inch pieces
2 tablespoons butter, melted
2 tablespoons olive oil
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
In a large bowl, combine vegetables. Add remaining ingredients; toss to coat. Transfer to a large baking pan. Roast for 45-50 minutes or until tender, stirring occasionally. Serves 10
