Dutch Country Bean Soup
My Grandmother's Dutch Country Bean Soup is a warm and hearty dish that evokes nostalgia from the 70s, making it a perfect comfort food for any occasion. The recipe features large soup beans as the main ingredient, complemented by a ham bone that adds depth and richness to the flavor. Simmering these ingredients together creates a nourishing and delightful soup that's perfect for chilly days or a cozy family gathering. This recipe captures the essence of home-cooked meals, reminiscent of grandmothers' kitchens filled with warmth and love.

Recipe:
1 large soup beans
1 ham bone
1/2 cup chopped onion
1 cup diced celery
1 cup diced carrots
1 (8oz) can tomato sauce
2 teaspoons minced parsley
1 bay leaf, optional
1/2 teaspoon thyme
1 tablespoon sugar, optional
salt and pepper to taste
Soak beans in water overnight. Drain, add fresh water and cook slowly with ham bone for 2 hours. Put in onion, celery, carrots, tomato sauce, parsley, salt, pepper and sugar and simmer until vegetables are soft. Remove ham bone, trim off meat, cut it up and add to soup.
