Spinach and Mozzarella Salad

The spinach and mozzarella salad is a delightful dish that showcases the freshness of its ingredients. The vibrant, leafy spinach serves as a nutritious base, offering a mild earthy flavor that pairs perfectly with the creamy, smooth mozzarella. Juicy tomatoes add a burst of sweetness and a pop of color, enhancing the overall appeal of the salad.

Recipe:

1 cup purchased Italian dressing

1 tablespoon chopped fresh garlic

1 tablespoon balsamic vinegar

1 teaspoon oregano

1 lb. mozzarella cheese, cubed

1 package spinach leaves

1 lb. plum tomatoes, cubed

1/2 red onion, sliced thin


Whisk salad dressing, garlic, vinegar, and oregano to blend in a large bowl. Mix in tomatoes, cheese and onion. (can be prepared 1 hour ahead). Let stand at room temperature, tossing occasionally. Add spinach to salad and toss to combine. Season to taste with salt and pepper and serve.
